Pinto Bean Pie II

Pinto beans are the surprise ingredient in this gooey sweet pie that 's like a pecan pie. The beans are combined with chopped nuts, lots of brown and white sugars, eggs and butter. This yummy filling is then poured into an unbaked pie shell and baked until the filling is set and the crust golden. Serve with whipped cream or vanilla yogurt.

This is a mock pecan pie, which is quite similar to pecan pie, except that it uses pinto beans instead of pecans.

When we think of pinto beans we think of Mexican refried beans. But this delightful pie is most definitely a dessert, where the pintos take on a whole new personality when combined with lots of sugar, eggs, shredded coconut, butter and vanilla. The filling is poured into a prepared crust and baked for an hour. There 's enough filling for two sweet and delicious pies.

Lots of cinnamon, cloves and allspice go into this sweet pie. Sugar, flour, egg, spices, water and vinegar are stirred together and heated on the stove very slowly until thick and creamy, and then the filling is poured into a prepared crust. This wonderful old-fashioned pie is then baked, cooled and served with whipped cream.

Cinnamon, cloves, nutmeg, sour cream and lots of raisins make this custard pie special. Everything is stirred together in one big bowl, and then the mixture is spooned into a pastry shell and baked. Let the pie cool and serve it with whipped cream or vanilla ice cream.

This recipe was from our great-grandmother. Always a family favorite and a holiday must. Thin but flavorful.
