"This is easy and my kids love it. I've also made it with cubed pork from cheap pork chops. You can spice this dish up with crushed red pepper flakes. Serve over rice. Don't substitute dried basil, though! It has to be fresh! And though it sounds like a lot of basil, that makes the dish."

Directions

  1. Combine soy sauce, water, and sugar in a bowl.
  2. Marinate chicken in soy sauce mixture for 30 minutes.
  3. Heat 1 tablespoon oil in a large skillet or wok over medium heat.
  4. Cook and stir green onions in oil for 1 minute. Add garlic and cook and stir for 1 minute. Transfer to a small bowl.
  5. Pour 3 tablespoons oil into the skillet. Cook and stir chicken and marinade until chicken is no longer pink in the center and juices run clear, about 5 minutes.
  6. Add spinach leaves to chicken. Cover for 4 minutes stirring occasionally.
  7. Stir green onion mixture into chicken and spinach; cook to reheat onions, 1 to 2 minutes.
  8. Stir in basil and cook until heated, 1 to 2 minutes. Serve!

I have made this a couple times really good recipe. only thing I did different is I used velvet chicken. I love this recipe

This is easy to make and delicious! My husband, who doesn't even like spinach, yummed this up too. I loved it as-is. My husband would have liked more of a sauce to pour over the rice. He used a bottled Thai sauce as an immediate fix. Would love anyone's suggestions of a great, easy sauce to make to pair with this!

This was really yummy! I echo the review of another view who would have like to have more sauce, but I also served it over sticky rice and it was delectable! Love, love, love all the basil. I didn't have enough spinach on hand as the recipe called for, but it was fine the way it was.
