5 stars as far as healthy muffins go... :) I used all whole wheat white flour, 1 c. honey-no sugar, 2 tsp. cinnamon, 2 whole eggs instead of mixing whole and whites (cause i'm lazy), 1/2 pumpkin puree instead of apple butter, craisins instead of raisins, and 1/4 cup flax seed in place of 2 of the tbsp of oil. Next time I'm going to take out all the oil and use applesauce instead. They were still great muffins. My 3 and 1 year old ate 2 a piece when they first came out of the oven (the muffins that is, my sons were not in the oven). I love that there's nothing in these that makes me hold back from giving them to my kids.
