Ingredients

  • 2 cups whole wheat flour
  • 1/2 cup Stevia Extract In The Raw® Cup For Cup
  • 1/2 cup Sugar In The Raw®
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 cups carrots, peeled and grated
  • 1 large tart apple, peeled, cored and grated
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup sunflower seeds
  • 1/4 cup flax meal or wheat germ
  • 1 egg
  • 2 egg whites
  • 1/3 cup vegetable oil
  • 1/3 cup nonfat buttermilk
  • 2 teaspoons vanilla extract
  • 1/4 cup orange juice
  • 1/2 cup plump raisins

Directions

  1. Preheat oven to 375 degrees F. Spray 2 muffin top pans* with non-stick spray and set aside.
  2. In large bowl whisk together the first seven ingredients. In separate bowl combine carrots, apple, coconut, sunflower seeds and set aside.
  3. In third bowl combine the egg, egg whites, oil, buttermilk, vanilla and orange juice. Add carrot mixture to dry ingredients and stir to combine, then add egg mixture and stir just until well blended. Stir in raisins.
  4. Divide batter evenly into muffin pans. Bake at 375 degrees F for about 12 minutes or until a toothpick comes out clean when inserted.
  5. Remove from oven. Let cool in pan for 5 minutes. Remove and place on cooling rack.

  • *Regular muffin pans can be used in place of muffin top pans, if necessary.
