So Easy, So Good, So Versatile. Breath_In_Dreams said she wasn't going to brown the flour next time because she said it tasted like browned flour. Wait until she gets the taste of "raw" flour. Ich. Just brown it as much as you think you'll like it.

This is the base I use for chipped beef gravy. My mother used to put bacon grease or sausage in it and put it over homemade biscuts. YUM!!!

I think this must be an acquired taste. Know lots of people who love biscuits and gravy. Tried them at a local truck stop years ago, didn't love them. Tried this recipe, and again didn't love them. Maybe needs more flavor from pork fat? Not my thing, I guess.

This is also my mothers country gravy that came from her mother that came from her mother and my mother is in her 80's so it's been around for a very long time. I do want to share one of my tips for this wonderful recipe...After the flour is browned, I turn the heat off long enough to stir or whisk in the milk. Then I finish cooking until thickened. This method gives me a lump free gravy every time

No pork fat - If you want to add flavor to your country gravy instead of all the fat with sausage or bacon grease, try peanut butter. Yes, peanut butter! Put your cooking oil in the pan and then add a big spoonful of peanut butter. It melts down like crisco. Brown it just a little, then start adding your flour and milk, etc. It's really great on biscuits and it does not have a strong peanut butter taste. Try it, you'll be suprised!!!

My mother made It exactly like this all the years I was growing up and still does. Sometimes she would use bacon grease; never sausage drippings. That would completely change the flavor of it. No butter. This is what country gravy should be.
