Did not like the addition of the flour, oregano and definitely not enough spices. I am Italian and we always did the following:
fry chicken pieces in olive oil browing on all sides, remove from pot and set aside. Throw away the chicken grease and add 2 tbs of olive oil to the pot. Saute about 1-2 onions for a few minutes and then add the crushed garlic and saute 1 minute more. Add the green and red peppers, then add mushrooms and saute for another couple of minutes. If you want you can add some crushed red pepper flakes, and then add white wine and reduce liquids by 1/2. Add 1 large can of crushed tomatoes and the chicken back into the pan. Simmer about 1/2 hr till chicken is no longer pink inside.Season to taste with salt, pepper, red pepper flakes, garlic powder and onion powder if desired. Just an additional note, my mom's family was from Naples, Italy and they did not add wine but added a jar of pickled vegetables called Giardinere to the peppers, onions, and mushrooms. That version is also very good.
