Ingredients

  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes and green chilies, drained
  • 1 avocado, cut into 1/2-inch chunks
  • 1 roma (plum) tomato, chopped - or more to taste
  • 1 small red onion, chopped
  • 3 tablespoons pickled jalapeno pepper rings, finely minced
  • 1/2 cup Italian-style salad dressing, or more to taste
  • salt and black pepper to taste
  • hot pepper sauce to taste

Directions

  1. In a large bowl, lightly stir together the corn, black beans, canned tomatoes with chilies, avocado, roma tomato, onion, jalapenos, and salad dressing until well combined. Sprinkle with salt, pepper, and hot pepper sauce to taste. Refrigerate until serving.
