  1. Heat the Spectrum Organic Extra Virgin Olive Oil in a heavy bottom soup pot.
  2. Add in the onion and garlic and saute for 5 minutes or until the onion is soft.
  3. Stir in celery, carrots, squash and saute for 5 minutes more.
  4. Add in the Imagine Organic Vegetable Cooking Stock, potatoes, chard, spinach, pasta and tomatoes, and bring to a boil.
  5. Lower heat and simmer for 10-12 minutes or until the potatoes are soft and the pasta has cooked.
  6. Stir in the basil and Parmesan. Season to taste.
  7. Divide between 8 warm soup bowls and grate some fresh Parmesan over each bowl.

In an attempt to get some veggies into my 3 and 1 year old, I decided to make this. I didn't think I'd be a big fan but I loved it! Great on a cold winter day. I changed just a few things: used chicken stock, not vegetable; no potatoes; all spinach, no swiss chard; dried basil and canned tomatoes w/ seasonings. I think all these changes are minor according to our tastes but the general outcome is still the same and delicious!

This was a decient soup, I changed the amount of garlic to 3 large cloves, and less oil. I did not add the cheese. Next time I'll not add the potates, and I will add some beans, maybe black beans for more color and protein. My husband and youngest son thought I lost my mind and were wondering where the "meat" was. My eldest son didnt like the potatoes. I had went a bit crazy at the Farmer's Market and this was a good way to use what I picked up! Will make again.

Can't say enough good things about this soup. I used a winter squash and did not use celery and chard cause I did not have those at home. Reduced the olive oil and added some in the end.

This soup is delicious. I would just put a little less orzo pasta in. Mine came out more like a hearty stew instead of a brothy soup.

This would have been 5 stars if it didn't call for so much cheese. Don't get me wrong..I'm Italian and I put cheese on everything I can. I will make again with the revision.
