Original recipe makes 4 servings Change Servings


  1. In sealable plastic bag, combine chicken and marinade of lemon peel, 2 tablespoons lemon juice, 2 tablespoons olive oil, garlic, salt and pepper. Seal bag and refrigerate for 30 minutes.
  2. In bowl, whisk together remaining 3 tablespoons lemon juice, roasted garlic, remaining 1/2 teaspoon olive oil, sea salt and fresh ground pepper. Mix in tomato, green olives, capers, basil and avocado. Place plastic wrap on surface of Avocado Tapenade; set aside.
  3. Remove chicken from bag and discard marinade. Grill over medium-hot coals for 4 to 5 minutes per side or to desired degree of doneness.
  4. Serve with Avocado Tapenade.

The tapenade was delicious the marinade not so much. I would reccomend someone use a favorite mexican type marinade if anything instead. Also, do not eat for leftovers!! The avocado turns into an unappetizing flavor.

I was a little apprehensive but decided to give it a try. My fears were completely unjustified, as it turned out to be delicious! I loved the tapenade and thought the lemon marinade went well with it. One tip: for this one it is a must to use FRESH INGREDIENTS.

an excellent mix of flavors. one of our favorites. the lemony marinade blends well with the avocado and capers.
