1 (12 ounce) jar
quartered marinated artichoke hearts, drained, oil reserved
grape OR cherry tomatoes, halved
cucumber, quartered and cut into 1/4-inch slices
crumbled feta cheese with basil and sun-dried tomatoes
Morton® Coarse Kosher Salt, divided
prepared peppercorn ranch-style dressing, divided
chicken strip tenders, cut into 1-inch pieces *
My family loves this salad! After the first time, we switched to an olive oil Italian dressing, since we're not big fans of ranch. The Italian dressing seemed to bring out the Mediterranean flavors more. It's also great stuffed in a pita or wrapped in a flatbread.
This sounded really good because I love artichoke hearts, but the combination of flavors just didn't work for me. I wouldn't make it again.
