Mashed Sweet Potatoes by Jean Carper

Ingredients

  • 2 1/2 pounds sweet potatoes
  • 3 tablespoons Amaretto (almond liqueur) or maple syrup
  • Cinnamon, to taste
  • Ginger, to taste
  • 1/4 cup toasted almonds

Directions

  1. Microwave whole potatoes until done. Cool to touch. Remove pulp. Mash with liqueur and spices. Top with almonds. Reheat in microwave.
