These were fabulous! Used green food coloring gel rather than liquid for a great bright Christmas green. This got rave reviews when I brought them to work too.

These were very good. Maybe I screwed something up in the filling because it came out very light and fluffy due to all the eggs in it. Almost was like a meringue. I would have preferred a thicker filling so next time and there WILL be a next time, I will use 2 eggs total in the filling. If you love rainbow cookies like I do you will love this. Its not the same, but very similar flavors.

These were moist and not too sweet made with apricot jam. I used the 15 x 10 jelly roll pan and the crust was the perfect thickness. I had some difficulty spreading the batter in the pan until I used an off-set spatula. I used the Hard Chocolate Glaze from this site instead of the icing. If you like marzipan, these will be a hit.

Very good- although kind of sweet. I didn't have a jelly roll pan though, so I used a 9x13- therefore the pieces were thicker, so maybe that's why it was so sweet. I cut back on the food coloring and used my mom's homemade blackberry jam. These were fun to make- thanks for the recipe.
