This was allright. Inspired by the fajita idea, my hubs grilled a 1 lb. cut of meat that we sliced and served with a mix of red / yellow bell peppers and sweet onion (FYI, I adjusted the marinade proportions accordingly). I must admit, chicken or shrimp fajitas if given a choice, but am willing to eat beef ones on occasion since my husband likes them so much (marriage = compromise lol!). It doesn't help that I prefer my beef medium well either.... Flank steak is a tough cut of meat to begin with. There is a fine line between perfectly cooked and overcooked flank steak and I think I crossed that line. :( Even so, I didn't get the WOW factor I was hoping for. My meat was only slightly seasoned and I marinated it for nearly 24 hours! The addition of cumin and / or fresh cilantro *might* have made a difference, but I didn't want to significantly alter this recipe before trying it as intended (I hate when people rate a recipe they've significantly changed). If for nothing else, I really enjoyed the veggies we grilled to accompany our fajitas. Mexican rice, chips, homemade guacamole and margaritas rounded out our meal. Maybe this will float your boat, but it didn't do much for us. Thanks anyways, GUYCON. :-)
