  1. In heavy bottomed saucepan, over medium heat, stir together syrup, sugar, butter, and water until melted and creamy. Continue to gently boil and do not stir until candy thermometer reaches 300 degrees F "hard crack". Immediately stir in walnuts and carefully pour hot mixture onto an ungreased cookie sheet and spread out to a thin layer with a wooden spoon.
  2. Cool completely. Break into large pieces and store in an airtight container.

Delicious! Followed the recipe exactly and it turned out perfect. Melts in your mouth. Check the humidity before you make this. If it's humid, it will not turn out at all. So good though. You have to try this!

I followed the recipe and it cooled but never hardened. My boyfriend was really looking forward to them...

This is delicious. I've never really liked peanut brittle, but the walnuts and maple flavor go together beautifully. If it doesn't harden, it wasn't heated up to hard crack stage. I had no problems with this recipe and I live in Houston, one of the most humid places in the US.
