  1. Place sweet potatoes in a large saucepan with water to cover them. Bring the water to a boil, reduce heat, cover and let simmer 25 to 30 minutes until tender.
  2. Preheat oven to 350 degrees F (175 degrees C). Use non-aerosol non stick spray to grease a 8x8 inch baking pan.
  3. When the sweet potatoes are cool, peel and cut them into large chunks. Arrange them in the prepared dish.
  4. In a small saucepan, melt butter, syrup, sugar and coconut together over a low heat. Cook for 3 to 5 minutes, stirring constantly. Sprinkle mixture over sweet potatoes. Top mixture with pecans.
  5. Bake 5 to 7 minutes, until top is lightly browned.

Delicious, and not too sweet. I used all of the three average-sized sweet potatoes, and didn't add the coconut. Next time I make these, I'll cut the boiling time down to about 20 minutes, so they're not so soft.

Sorry but unless you are hoping for something that tastes like dessert, try another recipe. The sweet potatoes only need a little sweetener as a side dish to a main course. The topping here tastes and looks exactly like toffee. Way too sweet.

These Sweet Potatoes were very delicious, I didn't use coconut or pecans, and I topped them with marshmellows. I will us this very easy recipe for now on..THANKS SO MUCH!

Simple, Fast, and unbelievable taste!! The hint of maple made me go back for seconds and thirds and gone....Very easy. We did not use the coconut or nuts because of the baby and it was awesome! I have never rated anything online but this was sooooo good I had too!

Easy and delicious, I served at a party and it went over quite well. I used yams rather than sweet potatoes, walnuts instead of pecans, and skipped the coconuts. Also, I added parsley. I think this recipe is a bit heavy on sugar, I think it could be cut back a bit, perhaps using some oil instead?

Excellent. My boyfriend loved it. I actually just put a dash of cinnamon which wan't too overbearing but one could taste it. Very very good, Will def make it again.

Very yummy. Quite sweet...almost dessert-sweet. Very easy. I did not have maple syrup so I substituded pancake syrup. Worked out great.
