Don't be alarmed by the thick batter, they turn out great! I could tell the "bones" of this recipe were perfect, but for the ingredients I didn't have on hand I was forced to sub a bit - 1 c. quick oats instead of wheat germ, Light N Fit vanilla yogurt (so eliminated the vanilla extract) for the applesauce, and pomegranate-flavored Craisins for the raisins. Not a big fan of coconut so left that out. I think you could do pretty much anything with this recipe and still have great results as long as you keep the same wet-to-dry ratio. This recipe made 9 mini loaves and 6 regular cupcake-size muffins (left the mini loaf pan in about 3 minutes longer). These are so delicious and fiberful yet don't produce the harsh results fiber sometimes can. Thanks so much for this recipe that I'm sure is fabulous as posted but can be easily adapted to your tastes or ingredient availability!
