Lobster de Jonghe

Ingredients

  • 24 ounces cooked and cubed lobster meat
  • 1/2 cup bread crumbs
  • 2 tablespoons thinly sliced green onion
  • 1 tablespoon lemon juice
  • 1/2 cup butter, melted
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup butter, melted

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a small bowl, mix together bread crumbs, cheese, green onions, 1/4 cup melted margarine, and lemon juice. Set aside.
  3. Place lobster meat into 6 ramekins. Pour 1/2 cup melted butter or margarine over lobster, and top with bread crumb mixture.
  4. Bake for 25 minutes, or until topping is browned.
