Directions

  1. Preheat oven to 400 degrees. Pierce potatoes with a knife and bake 45 minutes, or until tender. Cool.
  2. Cut potatoes in half lengthwise and scoop potato out, leaving a 1/4" of potato on the skin.
  3. Halve potatoes again then brush the inside of the potatoes with olive oil and sprinkle with salt. Place under broiler for about 5 minutes or until light brown.
  4. Fill skins with cheese, scallions and bacon. Broil until cheese melts and serve with sour cream.

soooo good. and filling. i could only eat 3. i didnt use scallions though, but they were still amazing. better than i've had in a restaurant.

You are alsome ! I love this I wont to say one thing .If you brush your potatos with oil, what ever you have on hand ,olive oil ect... be for bakeing the out side is crisp and light. Other than that this is great.

You can't argue with perfection..They were delish..I spritzed them w/butter spray in step 3 popped them back in the oven used sharp cheddar,scallions & bacon DH was very happy and very stuffed thanks for sharing =0)
