This lentil soup rivals my mother's recipe. It turned out amazing. I made few changes: coated my dutch oven w/ coconut oil spray (Trader Joe's) omitting the 1/4c oil. I used 4 cloves garlic (not 2), 2 bay leaves, 2 cans stewed tomatoes, and 3 T balsamic vinegar (it gives a depth of flavor that other vinegars don't). Pureed 2-3 cups of it in Vitamix and added them back for a velvety base. Finished w/ Borsari salt and cracked pepper and green Tabasco. AWESOME!!!!!!!! Some reviewers used chicken broth, but I don't think this needs it. It was full of flavor. Who would believe this is a vegan recipe?........cheap, healthy, and so yummy!!!!! Thanks for posting it!
