This is my new favorite salad! I liked that it wasn't the typical creamy version of the salad. The dressing was lite tasting yet flavorful. I used a mix of romaine and leaf lettuce for color. Make sure to spin the lettuce well, or it will water down the dressing. To save time I even used pre-minced garlic, which I don't normally use for dressings, and it worked great. I have made it with and without croutons and have added sliced English cucumber. For the red onion, I just add about 2 Tblsp of thinkly sliced pieces to not overwhelm the salad. As others have mentioned this really isn't Caesar but it's quite tasty nonetheless. If you would like to try a quality fine restaurant Caesar dressing (that tastes like the dressing the server makes right at your table) you can try mine below. To make this a Lemony Caesar just add 1 tablespoon extra lemon juice at a time. The mayonaisse replaces the raw egg that is traditionally used in a Caesar. I don't care for anchovies but if you like them then mince 2 to 3 anchovies and add to the other dressing ingredients.

Nice homemade dressing. Next time, think I'll put in a little bit of the anchovy paste that I keep in the fridge (and rarely ever use) which should elevate it to more of a caesar salad flavor. But we enjoyed this as is, too.

A most excellent salad. Perfect ratio of olive oil to lemon juice. I used only 1/4 tsp. salt. I love garlic, but sometimes find it a bit overwhelming when it's raw, so instead of mincing it, I smashed a clove and just let it hang out in the dressing for a while. I then removed the garlic before serving. This gave the dressing just a nice hint of garlic. I will make this salad again for sure.

This was great. It didn't taste like normal caesar salad dressing, but it was still very good. I used spinach instead of lettuce.

Delicious! Sure it's not a true caesar salad, but it's tasty all the same. Good combination of flavors and simple to make. Be sure to use a good quality olive oil :)
