Lemon Cloud Pie I

First you make a simple lemon custard, then you stir in cream cheese, and then comes the sweetened whipped egg whites. That 's the cloud-like part. This lovely pale yellow filling is then spooned into a baked crust and chilled. Serve with fresh, sliced strawberries or blueberries.

This pie has a luscious, made-from-scratch lemon pudding, so you 'll need a double boiler. Fresh lemon juice and grated lemon rind are stirred into the thick pudding just before it 's poured into a pie shell. Then a meringue is whipped up and spread over the top, and the pie is slipped into the oven until golden brown.

First you make real lemon custard studded with bits of lemon zest. Then you whip up the meringue. Half the meringue gets folded into the filling, and the other half gets spooned on top of the pie.

This is a deceptively simple pie to make that boasts a wonderful creamy, sweet lemon filling. Eggs, lots of sugar, butter, milk, fresh lemon juice, and a bit of white cornstarch for thickening, are stirred up, poured into a pastry shell, and baked. Dust the top of pie with freshly grated nutmeg.

This yummy pie is made with skim milk, but you 'd never know it. It tastes rich, lemony and very sweet. Beaten egg whites are folded into the filling for volume. This lovely old-fashioned pie bakes up golden, and perfectly sets in less than an hour.

This is a real made-from-scratch pie, so get out your double boiler. The lemon filling is smooth and thick with lots of egg yolks, butter and lemon juice. And the meringue has a bit of lemon juice whipped in.

Thinly sliced lemons are coated in sugar and allowed to sweeten before they are combined with beaten eggs and arranged in layers in a pie shell. The top crust is popped on and the pie is slipped into the oven to bake.
