I loved this recipe..it's very quick and tasty.
I used American Light Cheese instead of the Velveeta and it worked fine. Great way to eat healthy broccoli.
Thank you for this recipe. I would have given it 5 stars, but the broccoli got a bit watery and it made the sauce quite thin.
I made some changes. I fried some onions in butter and layered it on the bottom of a baking dish. I steamed the broccoli slightly before rolling it in the fish fillets. Instead of Velveta, I made a thick cheese sauce and poured it over top and baked it @ 350 for 20 min.
I will make it for company because it is an easy dish to prepare ahead.
Great for kids. Even simpler is to cook the fish as suggested, but steam the broccoli separately. Put the fish and broccoli side by side on a dish, and then erizzle with the melted cheese sauce over all. Kids prefer it this way.
The best wintertime meals need a long, slow simmer while you're doing something else.
