I usually make this the day after we have roast chicken. The recipe calls for baking, but the ingredients can also be added to a slow cooker and cooked on Low for 7 hours. We serve this with cheese, tortilla chips, sour cream, salsa, black olives, and guacamole.

I've begun making my enchiladas casserole style, which saves a lot time, not to mention burned fingers. :) However, everyone still raves over my enchiladas, and this recipe recently earned a round of applause when I made them on a skiing holiday. The sauce is actually a modified Alfredo recipe and is also great over fajitas.

Funky Enchilada Casserole

Chicken beans and peppers are baked with corn tortillas and topped with cheese. A great quick casserole that everyone will love. Serve with sour cream, hot sauce and cold diced tomatoes or salsa if you like. Maybe even serve some chips and Guacamole to round it out.
