This has been a family favorite for as long as I can remember - and I am 71. My grandparents lived in the mtns. of SW VA. It was known as "scalded lettuce" in that area. I have yet a different version of this recipe. Living on a farm, my grandmother had access to fresh cream which really adds to the recipe. In later years, we used canned milk. Fry bacon and save a tbsp or so of the bacon grease, add vinegar and a small amount of water, sugar, and canned milk. Heat to almost boiling and pour over "leaf lettuce" (or spring lettuce) in which you have chopped up spring onions including some of the green "tops", boiled egg, and salt. Put a plate over the bowl and let the mixture "wilt"! DELISH!!!
