Let's talk about a simple concept called "Thermal Shock". This recipe is thoroughly sound in design. The salt and vinegar will penetrate the shell and loosen the skin from the egg, making peeling a breeze. Especially if you use the "end peel and blow through" method of peeling eggs. However, if you, like billions of other folks, refrigerate your eggs, DO NOT PLACE THEM DIRECTLY INTO BOILING WATER!!!! Thermal Shock will cause most of the eggs to not only crack, but EXPLODE, possibly injuring you, and definitely ruining your egg. This recipe is PROPERLY EXECUTED by putting the eggs in the water-salt-vinegar mixture, bring to a rolling boil, then remove from heat. Cover and let sit for 15 minutes, then immerse in ice water or cold running water for 10 min. BE SAFE!!!
