Ingredients

  • 3 medium russet potatoes, washed and cubed
  • 2 medium sweet potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 1 medium green or red bell pepper, chopped
  • 1/4 cup olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 (12 ounce) package Johnsonville® Chipotle Monterey Jack Cheese Chicken Sausage, cut into 2-inch pieces

Directions

  1. Preheat oven to 400 degrees F. In a large bowl, combine the potatoes, onion and bell pepper. Add the oil, salt and pepper; toss to coat. Transfer to a greased shallow baking pan. Bake for 40-45 minutes or until potatoes are tender and lightly browned, stirring occasionally. Arrange sausage over vegetables. Bake 5-10 minutes longer or until sausage is heated through.

Modified using all russets and used roasted red pepper chicken sausage. The whole family loved it.
