Ingredients

  • 1 1/2 pounds uncooked penne or medium tube pasta
  • 1 pound ground pork
  • 1/2 cup chopped onion
  • 1 (14.5 ounce) can stewed tomatoes
  • 1 (8 ounce) can tomato sauce
  • 1 teaspoon Italian seasoning
  • 1 medium zucchini, cut into 1/4-inch slices

Directions

  1. Cook pasta according to package directions. Meanwhile, in a large skillet, cook pork and onion over medium heat until meat is no longer pink; drain. Add the tomatoes, tomato sauce and Italian seasoning. Bring to a boil. Reduce heat; cover and cook for 5 minutes.
  2. Drain pasta and add to the skillet. Stir in zucchini. Cover and cook for 3-5 minutes or until zucchini is crisp-tender.
