Jen's Tasty Duck Rigatoni

  1. Heat 2 tablespoons olive oil in a large skillet. Saute meat until brown.
  2. Add wine, reduce by half. Season with salt and pepper; add bay leaves. Cover with hot broth. Simmer until duck is completely cooked through.
  3. Meanwhile, heat remaining olive oil in a separate pan. Add onion; saute until golden. Add to duck. Simmer 10 minutes.
  4. In same pan, saute apples for 2-3 minutes until soft, not mushy. Set aside.
  5. Meanwhile cook pasta according to the directions. Drain, reserving 1/2 cup pasta water. If needed add a little water to the sauce.
  6. Add apples to sauce. Add pasta to hot sauce. Mix well. Add cheese. Remove bay leaves before serving.
  7. Garnish with chopped parsley.

Very good! We really enjoyed this dish. It didn't blow me away (hence 4 stars), but it was definitely good. It's not pretty, but has a very nice flavor. I thought the wine would be overpowering - it wasn't. I did forget the parsley, but doubt that made a difference, and I used penne since my grocery didn't carry Barilla rigatoni. My only real complaint was difficult timing with things cooking in 3 different pans. Another winner from Barilla!
