One day while eating at our local Japanese restaurant I teased our chef and asked for the ingredients to their shrimp sauce. Surprisingly he gave me a few of the ingredients, the same as this recipe, except he said to soak a few slices of a fruit (apple or orange) in it for a while. He did not say for how long, probably a couple of hours. He did say to not let it ferment. For those of you who thought something was missing from this recipe, maybe this is it.
