I very rarely change a recipe - especially when baking. But, after reading reviews of many different recipes on this site, I did on this one. I used cake flour; 1/2 brown sugar instead of all white; I only had 2 small bananas so I grated a granny smith apple along with the banana; and, I used mostly plain greek yogurt since I only had a couple spoonfuls of sour cream left. It came out great - really moist and while it didn't have a really strong banana flavor it was still a very tasty banana bread.
