This is really a wonderful soup, hearty
enough for a winter meal, and yet light
enough for s summer meal as well. Super
simple to prepare, to make it a little
quicker, I use a few handfuls of frozen
spinach instead of fresh and chop the
carrots in a food processor. But fresh
spinach is the best, if you have it.
