Maybe this soup will be better tomorrow after the flavors have an opportunity to come together but tonight we were just not all that impressed. I can't really explain why, since all the right ingredients are there, but it just didn't have the rich flavor I expect from a soup like this - it just seemed kind of flat, even though I seasoned it with a good amount of salt and pepper. I did add some minced fresh onion to the meatballs instead of the onion powder, as well as minced garlic and fresh parsley - I can't imagine how boring and flavorless they would have been otherwise. In addition, to add a full cup of pasta to only six cups of broth seems to be an obvious error - half that amount was plenty. Escarole is wonderful in soup, as is any kind of pastina, in this case the orzo. So I'm thinking it's the carrots I don't like here, which contribute a sort of sweetness I found unpleasant. This soup is okay but not great. Hopefully the leftovers will be better tomorrow.
