Italian Sausage Jambalaya

Ingredients

  • 1 (19 ounce) package Bob Evans® Italian Sausage, cut into 2-inch pieces
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (10 ounce) package frozen cut okra, thawed
  • 1 cup chicken broth
  • 1/2 cup uncooked rice
  • 1/2 teaspoon hot sauce
  • 1 teaspoon oregano
  • 1/2 teaspoon thyme

Directions

  1. In a nonstick skillet over medium heat, cook sausage alone until done. Set aside. In same skillet, saute onion and celery until tender. Add cooked sausage, tomatoes, okra, chicken broth, rice, hot sauce, oregano and thyme. Stir to combine. Bring to a boil. Cover, reduce heat to low and simmer for 15 to 20 minutes or until rice is tender.
