Nice recipe. Try it with celery too. Not too much though, you don't want to overpower it. Almost any vegetable, preferably white vegetables, can go into Irish stew. A small amount of sliced white cabbage, turnip or cauliflower. No tomatos, egg-plants, peppers or anything of this nature. They weren't available traditionally in cold rainy Ireland. Drinking draught Guinness with this, even from a can, is really not recommended. Speaking as an Irishman who drinks Guinness all the time, I can say that this is quite a heavy meal and Guinness will cause you to fill up too soon or feel bloated for the day. Keep the cans chilled and have them two hours after the meal. By the way, don't feel you need to restrict yourself to the quantities mentioned in this recipe. Make as much as you can. This meal grows in flavour the longer you leave it. Refridgerate it and eat it three days later for best experience.
