Healthy, fast, easy, and the children love them. This has been added to our regular menu. We boil the potatoes in 20 to 30 minutes vs baking and make our own taco seasoning without the chemicals and perservatives in the packages. A great recipe!

These are so very good!! But may I recommend adding a can of drained and rinsed kidney beans to the ground beef mixture, and adding chopped fresh tomatoes. We've even added sour cream. Oh my, so very , very good!

I'm always trying to add more veggies to our meals. This recipe looked good. I didn't have a taco seaoning packet on hand, so instead I used a fajatia packet. I also chopped up a green bell pepper and tomato and cooked it into the meat mixture. We topped our potatoes with the meat mixture, olives, cheese and sour cream. The whole family loved it.

We make these all the time! They're so simple to do. I usually just top the beef with shredded mexican cheese and sour cream, though we have thrown on some canned corn before and had good results.

These were really good! I topped them with lettuce, tomato, cheese, onion, tomato, sour cream and crushed up Doritos. Will definitely make these again!
