These cookies are fantastic. I used the entire 15 oz. can of pumpkin (1 3/4 cups), substituted half the white sugar for brown sugar, and added 1/2 cup of raisins.
I left the icing off some -- they taste more like muffin tops without the icing, which in my opinion is totally fine. The icing adds sweetness and transforms them into more of a dessert item.
As another user mentioned, don't store these cookies as a sealed container. I left them in an open bag in the fridge to keep the icing from getting gummy, and that helped the cookies from going to much as well.
