I have made these twice. The first time I followed the recipe pretty closely except for adding a half teaspoon of ginger and cutting the cloves back to 1/4 teaspoon. They were good, but icing them was a hassle, and they didn't store well, the icing would stick to the other cookies if you stacked them at all. So, in order to see if I could make them easier to store and send, instead of icing, I added a package of white chocolate chips to the dough. Wow, they are really good that way and much less work. Husband and son liked them better with the white choc chips, and they loved them with the icing. Best pumpkin cookies I have found, soft and cakey, while retaining their cookie shape.
