What a fun, easy recipe!! I went to a "Xmas in July" party last night and these were perfect. I had 4 neighbor kids (ages 10 to 13) helping...they had such fun. You wouldn't believe how creative they were. One of the favorites was putting a Jr. Mint inside the ice cream then rolling in crushed red peppermint. Another one used a small melon scoop and made mini snowmen. This can be used anytime.... just let your imagination go wild. Thanks for sharing.

My mother used to be able to buy these back in the '70s. They came with little red candles and a plastic holly leaf for each. This was a major tradition in our family to have them Christmas Eve night after we came back from church and before we were sent to bed (or Santa wouldn't come). I've made these once in the last 25 years, and look forward to making them again to share with my family.

Had these in St. Thomas & they were to die for! Only difference is that the coconut was first toasted. I toast the coconut in the oven & when fully cooled, roll the ice cream balls in it. Top with hot fudge .... You can figure out the rest! :)

I used white sprinkles on some for those picky people in my family who don't like coconut, the end result was just as cute and yummy

My mom use to make this for me and my siblings. She would add some red and green icing to look like a poinsetta on top.

This is so cute! Just coat any flavor of ice cream, that has been shaped into a rounded ball, with coconut! If you can't get the kids to eat ice cream, maybe they will try this because they like coconut! I'll be making these again!
