How to Make Dulce de Leche

Recipe by

"This is basically sweet, caramelized milk. It's so easy and so delicious. I like it better than caramel sauce on anything you'd use caramel sauce, such as on ice cream, toast, cookies, cakes, brownies, or to pour on people."

Directions

  1. Wash the nail and pound it into the top of can of sweetened condensed milk to make 2 small holes on opposite sides of the top. Remove nail.
  2. Place the can of condensed milk into a small saucepan and pour in water to reach high up the side of the can. Bring water to a boil; reduce heat to low. Simmer milk in the can for 3 to 4 hours. Milk will slowly turn light to medium brown and become thicker as it cooks. Add more water as it boils down.
  3. Remove lid from can and pour dulce de leche into a bowl. Whisk to break up any lumps and mix thicker caramel from the bottom into the rest of the syrup.

This is excellent! It's helpful to have a large pan of simmering water on the stove to maintain the water level in the small pan without changing the water temperature. I simmered mine exactly for 3 hours because I wanted it somewhat thin to spread on top of a Tres Leche cake. 3 hours is a long time, but as long as I checked it often and maintained the water level to an inch below the top, it was as easy as it gets. It was so delicious that I had to stop myself from eating it right out of the can! Much better than anything in the store.

I made this a couple of time according to the directions, then found that you can buy dulce de leche in the store. I also found it was very time consuming to make it on the stove. I used the same idea and placed it in a small crock pot and cooked it for 4 or 5 hours. This worked better because the water didn't boil away. Go for the crock pot version - or just buy it.
