Directions

  1. Prepare and heat ham according to package directions.
  2. Meanwhile, prepare glaze. Mix honey with dry mustard and lemon juice in bowl; set aside.
  3. For the relish, combine crushed pineapple with orange juice in saucepan. Bring to boil over medium heat; cook to reduce juices 5 minutes. Stir in sugar until dissolved. Add water; return mixture to boil. Stir in orange and lemon zest, and cranberries. Cover pan; simmer over low heat 5 minutes to plump cranberries. Remove pan from heat and stir in pecans. Set relish aside to cool. (Relish may be prepared up to one week before serving. Store in refrigerator in tightly covered container.)
  4. Brush glaze on your Cook's ham 30 minutes before meat is done. Heat ham uncovered for final 30 minutes. Carve ham and serve with cranberry relish.

I didn't actually make the Ham of this recipe, I made the cranberry relish. I live overseas and you can't buy fresh or frozen cranberries here and I really wanted to make a cranberry sauce for Christmas. The only thing I did different was I pureed it after it was cooked. Not quite the same as a fresh cranberry sauce but, a very tasty and close substitute~!^^ Thank you

I didn't use the glaze in this recipe, but I did use the relish- I wanted something different from the normal cranberry sauce out of a can. I made it today for our Christmas dinner and everyone LOVED it!! I made it one day before and chilled it overnight. It has a beautiful presentation and the taste was wonderful.
