Directions

  1. Stir together sugar, cocoa, cornstarch and salt in heavy saucepan; stir in milk and egg yolks. Cook over medium-high heat, stirring constantly, until mixture boils; boil and stir 1 minute. Remove from heat; stir in butter and vanilla. Cool.
  2. Drain strawberries; in blender, puree to equal 1/2 cup. In small mixer bowl, beat whipping cream and powdered sugar until stiff; fold in strawberry puree.
  3. In parfait or wine glasses, alternately layer chocolate pudding and strawberry cream, ending with chocolate. Cover; refrigerate until set.

I thought it was too much unnecessary trouble. Instant chocolate pudding would have taken a chunk off prep time.

My 10 year old daughter made this recipe (with frozen raspberries instead of strawberries) and we were delighted with the results. She had trouble getting the layers to look nice, without streaks or glops of the two layers on the sides of the glass. I would recommend putting the pudding and the strawberry cream into pastry or Ziploc bags with a corner cut off and squeezing the layers into place. I would also recommend putting Saran Wrap on the pudding surface before cooling so that a "skin" wouldn't form. Yes, this could have been made with instant pudding and the strawberry layers, or even instant pudding and berry puree folded into Cool Whip, but homemade tastes so much better!

I did substitute regular instant pudding for the homemade. My major problem was with the strawberry portion--in the ingredients it calls for heavy cream, but when I tried to beat it till stiff nothing happened. It was strawberry puree soup. Then I looked at the directions and it calls for whipping cream! Obviously a mistake on the recipe submitter's side. I tried to salvage it by chilling it, but when you try to layer the chocolate with thickness to it and the strawberry with the consistency of a thick liquid--well, they didn't layer well and I had several messy glasses of 'kinda' parfaits. I won't be using this recipe again, but others may try substituting the heavy cream for whipping cream, or fold in the strawberry puree with Cool Whip.
