Poblano chiles are stuffed with Mexican cheese, dipped in frothy egg whites, and pan-fried until golden. When simmered briefly in tomatillo verde sauce and served with rice, beans, and tortillas these chiles rellenos make a delicious Mexican-inspired meal.
