Original recipe makes 4 servings Change Servings

4 large Yukon Gold potatoes
6 tablespoons butter
1 large sweet onion, diced
1 medium green bell pepper, diced

1 clove garlic, crushed
1 tablespoon Hungarian sweet paprika
salt and pepper to taste

Directions

Bring a large pot of salted water to a boil. Add potatoes, and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
Melt 4 tablespoons butter in a medium saucepan over medium heat. Stir in onion, green bell pepper and garlic, and cook until tender, 5 to 10 minutes.
Mix potatoes and remaining butter into the saucepan. Season with paprika, salt and pepper. Cook and stir until well mixed and tender, 15 to 20 minutes. Cover while cooking if moist potatoes are preferred.

Very good. I will definitely make this again but next time I will make sure to use the ingredients on the list. I used regular russet potatoes and some inexpensive paprika I had on hand. I also did not use bell peppers because I didn't have any and it really did need the peppers. I think next time I will also use a second clove of garlic. I substituted bacon drippings for some of the butter which I think added alot to the flavor.

These were delicious! I left out the green peppers and sauteed the garlic in butter. I partially microwaved the potatoes to speed things up. I used regular paprika and used Lawry's seasoned salt. These were perfect for Sunday breakfast paired with scrambled eggs, bacon, toast, juice and coffee. I doubt any diner could have compared.

AWESOME! While sauting the onion/bell pepper, I added a head of chopped broccoli and some fresh mushrooms I needed to use up before they went bad in my fridge. A perfect side to our chicken! In fact, this was the first to dissapear. Its not the most unique recipe but that doesn't detract from its taste. Paprika, potatoes & veggies - we can't get enough. Thanks Ruth!

These are soooooo good! I first tasted these earlier this week at work. I talked to the Chef and he showed me how to make them and this was his recipe, minus the green pepper and add bacon. These are so yummy. He just used paprika from a giant spice container and I doubt it was Hungarian. Mmmm!

This was delicious and easy to make. I didn't have Yukon gold potatoes so I used russet potatoes and it turned out fine. Hubby and I found this was even better when the leftovers were refried. Thanks Ruth!

YUM! I used idaho potatoes, which I opted to peel, used more garlic than called for and added a little bacon grease in with the butter. These turned out so flavorful and could not have been easier to make. Loved the addition of the paprika. I will be making these again! Thanks for sharing. :)

These were awesome. They were gone so quick. The only thing I would change is that I cut the pot. into too large of chunks. They would have gotten crispier if they were smaller. But I would recommend these to everyone.

Man! What an easy way to make home fries! I remember, as a little girl, my mom would make them and it seemed like the hardest thing in the world. The potatoes took so long to cook. However, boiling the potatoes first really cut down the cooking time in this recipe. Oh yea and I didn't use the Hungarian paprika I used some regular paprika and of course the home fries were still delicious.
