small Yukon Gold potatoes
1 1/2 pounds
(1/2-inch) diced red bell pepper
sliced green onions
small ham cubes
coarsely chopped walnuts, toasted
snipped fresh basil
extra virgin olive oil
white balsamic vinegar
sea salt, or to taste
Freshly ground black pepper to taste
This was surpisingly delicious. We mixed pecans with walnuts though, to give it a little more flavor. Even my kids loved it!

Great Salad.My husband does not like regular, creamy potato salad due to the mayo, so this one got my attention.
I made it with white wine vinegar, added celery and didn't add the basil, since I was out. I think it would have been just perfect with the added fresh basil. Definitely trying that next time!
