Ingredients

  • 2 cups cooked rice
  • 1 medium carrot, chopped
  • 1 small zucchini, chopped
  • 1 celery rib, thinly sliced
  • 1/2 cup cubed cooked chicken
  • 1/2 cup cubed fully cooked ham
  • 1/2 cup cubed Swiss cheese
  • 2 hard-cooked eggs, chopped
  • 2 tablespoons mayonnaise
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon lemon juice
  • 1 tablespoon olive or vegetable oil
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Directions

  1. In a large bowl, combine all ingredients. Cover and refrigerate for 4 hours or overnight.
