This is soo yummy! Especially the dressing, which I sometimes make for use on other salads. I always substitute yogurt for the sour cream (for extra points health-wise) and although it probably is a slightly nicer consistency with the cream, it's still delicious. :)

This was pretty good, I think the dressing needs more acidity to it, so I might add more lemon juice next time. I didn't layer it, just tossed it all in the bowl, and served whole grain rolls with it.

Hearty salad, indeed! A meal by itself! A good piece of bread would be nice, as I sit here and eat it. But it's tasty as-is! I took the advice and added chopped bacon (YUM!!!). I didn't feel like opening a can of beans for this (it's a lot of beans for just two people!!) but I'm imagining them in there and they'd be great =) The dressing comes together quick and is an outstanding addition--I'm glad I didn't skip it and use stuff I have on hand. Can't go wrong with this one for a healthy, filling meal!

"Hearty" is a very apt description for this salad. In fact, Hubs and I had this with a bowl of soup for supper and it was really satisfying. Great combination of flavors, colors and textures. I like toasted walnuts in salads but for this particular salad I subbed crisped bacon as I thought it a better choice, and it did go particularly well with the tomato and avocado. The dressing is a very attractive creamy, light green and is rich and flavorful - the cumin is prominent. This dressing would also be good with tacos or to garnish enchiladas. Bonus points for this salad, too, for being uncommonly nutritious!

This salad was great. The dressing was especially good, although I kept it in a separate dish so that people could take their desired amount. Great combination of vegis.
