Love an egg sandwich rather it is on toast or and English muffin. This made for a nice-filling breakfast. Made using turkey bacon and toasted the muffin.

Great breakfast sandwich. I did leave out the green onion because I was being lazy and I made my egg in the microwave. Very good!!!!

Hubs and I eat a lot of egg breakfasts so it was nice to get an idea for something that at least made the same old scrambled eggs look a little different on the plate, so four stars for creativity. (Otherwise this would simply be scrambled eggs with bacon and an English muffin, right?) I added chopped mixed color bell peppers, minced jalapeno, chopped onion and fresh, minced garlic for color, texture and extra flavor. I didn't mix the Cheddar with the eggs, reserving it to sprinkle over the top at the end, and served this with salsa. I thought maybe Hubs would have preferred everything separate on the plate (as usual) but he enjoyed it (although he's always a good sport about trying different things!)

Delicious and very "hearty" for breakfast! I used 4 eggs vs. 5 and that was a little much especially since I made one as a breakfast sandwich for my husband to take to work. I guess it all depends on what size eggs you use. I added just the slightest bit of milk to my eggs along with a bit of onion and garlic powders. I was a bit liberal with the fresh chives because I love them! I didn't add the cheese to the egg mixture, but used sliced cheese and let it melt over top. Any cheese will do! You could easily sub ham for the bacon - very tasty!
