I'm giving this recipe 4 stars because I had to make some adjustments to make this a 5 star recipe. I made this recipe TWICE and think I have finally perfected it:
1) Instead of oil, use 2 lunchable size applesauce (per other reviewers, thank you!)
2) use 2 cups oats and 1 cup low fat granola for more crunch, because this cookie is very soft.
3) for my personal preference, I added a diced apple, raisins, 1/4cup walnuts for more flavor and texture since I don't like dates.
4) bake at 350 for 30 minutes...I shaped my cookies into normal sized cookies, so they needed longer baking but trust me its worth it!
Overall, this recipe is a great foundation and very easy to tweak to your own liking! Love this recipe, I will always use it :) My boyfriend who doesn't like to eat "healthy" actually devoured these cookies!
