I've always loved roasting all vegetables, and potatoes are at the top of that list. I also love fresh herbs and garlic with a passion, but I've always been afraid to use those when roasting vegetables at high heat sure that they would burn. Still, I've seen so many recipes like this - and with fantastic reviews - that I thought I should try it. Perhaps I'm not as smart as I think I am hehe. Sure enough, it is wonderful. The herbs do turn dark grey-green, but the flavor is not burned. Same with the garlic. Why isn't it bitter? I still don't understand it, but I won't be afraid anymore.
