Yummy. I've made both this version and the original one with all of that delicious fat. By adding 1/4 of bread crumbs to the mixture it held together perfectly on top of the tilapia and is extremely comparable. I'll definitely be making this version from now on instead of the other one.
Pulsed first the Parmesan cheese in the food processor, then added the remaining ingredients. We substituted non-fat Greek yogurt for the mayonnaise. Once that was all combined, added the bread crumbs to the processor and pulsed to combine.
I spread a thin layer of olive oil over the aluminum foil before broiling the tilapia, to prevent sticking. This was DELICIOUS. Thank you so much for the recipe.
